Refrigerator Pickles

These tasty morsels are similar to bread and butter pickles. They have a sweet taste but are not as sweet as sweet pickles. Good just for dipping a fork into the jar and getting a quick, pickled snack.

Refrigerator Pickles

2 C sugar
1 C vinegar
1 tsp celery seeds
2 tsp salt
2 Qt sliced cucumbers
1 sliced onion
1 sliced green pepper

Put cucumber, onion, and green pepper in crock or glass container. Filling to the top is okay since the veggies will shrink down significantly.

In a saucepan, mix sugar, vinegar, celery seeds and salt over med-high heat and bring to a boil. Stirring occasionally to keep any sugar from burning. Once the mixture reaches a boil, immediately remove from heat and pour over veggies in container. Allow the contents (and container) to cool and then place into refrigerator.

Stir contents a couple times a day for 2-3 days. Pickles are now ready to eat. They will last in the refrigerator for around 3 months, though mine never seem to stay in the refrigerator long enough to test that. ;)
