Best. Guacamole. Ever.

Last weekend - Feb 20 - i made (actually mary made it with my recipe) the best guacamole i’ve ever had. I didn’t have a molcajete, but a blender sufficed… i just need to get the correct tools for the next time because it could possibly make it even better… tempting and amazing all at once… here’s what i used (english translation follows if you need it):
Guacamole verde
Ingredientes
3 aguacates grandes
8 tomates verdes
2 dientes de ajo
6 chiles verdes serranos
3 ramas de cilantro
1 cebolla mediana
sal al gusto
Manera de hacerse
Los aguacates se deshuesan y su pulpa se deshace con una espátula de madera. En el molcajete se muelen los tomates verdes crudos, los dientes de ajo y las ramas de cilantro y sal. Los chiles serranos y la cebolla se pican finamente. Todo se revuelve muy bien.
Green Guacamole
Ingredients
3 large avocados
8 green tomatillos
2 cloves garlic
6 serrano chilies
3 sprigs coriander
1 medium onion
salt to taste
Method
Remove the stone from the avocados and mash the flesh with a wooden spatula. Grind the raw tomatillos in a molcajete with the garlic, coriander and salt. Chop the serrano chilies and the onion finely and mix all the ingredients together.
The awesome part was that the stuff didn’t turn brown for half a week when it was all gone. No idea how long it would stay fresh looking but it was an ingredible flavor without a strong lime taste to it. Definitely would recommend, and i prefer the fresh cilantro to the dried coriander (yes, they are the same but differ in name when dried/fresh). It was very tasty with fresh, homemade tortilla chips. Yummy!!!

I love Guacamole!! I need to try this some time. Thanks Ben. Oh yeah I do have the pictures of Dan’s Radio so you can remove them from your flickr account. Want to go shooting this week sometime??
